Beef Stock
makes about 3 1/2 quarts
2 pounds beef short ribs, or other meaty beef bones
2 pounds beef marrow bones, cut into pieces
1 pound cubed beef chuck, fat trimmed
1 large onion, quartered
1 clove garlic, peeled
4 medium carrots, quartered
10 black peppercorns
1 bay leaf
1 teaspoon dried thyme leaves
3 sprigs parsley
3 ribs celery, quartered
4 quarts water
1 cup dry red wine, optional
1. Combine all ingredients in stockpot or large Dutch oven and heat to boiling. Reduce heat and simmer, covered, 5 to 6 hours, skimming any foam from surface.
2. Strain stock through double layer of cheesecloth, discarding bones, meat, and vegetables. Cool before refrigerating.
Remove congealed fat from surface of stock.
Variation:
Brown Beef Stock Place bones and meat in large roasting pan. Roast at 425 degrees until well browned, about 45
minutes. Transfer to stockpot and complete recipe as above.
